12 ounces whole wheat rotini pasta
3 cups corn kernels
1 red bell pepper, diced
½ cup finely diced red onion
½ cup chopped fresh cilantro
½ cup crumbled feta cheese
1 jalapeño, finely diced (optional)
¾ cup plain Greek yogurt
¼ cup mayonnaise
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Cook pasta according to package directions until al dente. Drain and rinse under cold water.
Char corn in a skillet over medium-high heat for 5–7 minutes; cool slightly.
