A lighter twist on classic street corn flavors, featuring charred corn, tender pasta, fresh vegetables, and a creamy Greek yogurt dressing perfect for meal prep and gatherings.

12 ounces whole wheat rotini pasta
3 cups corn kernels
1 red bell pepper, diced
½ cup finely diced red onion
½ cup chopped fresh cilantro
½ cup crumbled feta cheese
1 jalapeño, finely diced (optional)
¾ cup plain Greek yogurt
¼ cup mayonnaise
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper

Instructions

  • Cook pasta according to package directions until al dente. Drain and rinse under cold water.

  • Char corn in a skillet over medium-high heat for 5–7 minutes; cool slightly.

  • Whisk together Greek yogurt, mayonnaise, lime juice, olive oil, and spices.

  • In a large bowl, combine pasta, corn, bell pepper, red onion, cilantro, feta, and jalapeño.

  • Pour dressing over and toss until evenly coated.

  • Chill for at least 30 minutes before serving.
