4 slices sourdough bread (about 1/2 inch thick)
1 cup fresh blueberries (150 g)
4 oz cream cheese (113 g), softened
4 oz sharp white cheddar cheese (113 g), freshly grated
2 tablespoons unsalted butter (28 g), softened
1 teaspoon honey (5 ml), optional
1/4 teaspoon fresh thyme leaves (optional)
Pinch of sea salt
Spread 1/2 tablespoon (7 g) butter on one side of each slice of bread.
Spread 2 oz (56 g) cream cheese on the unbuttered side of two slices.
Add 1/2 cup (75 g) blueberries to each sandwich.
Sprinkle 2 oz (56 g) cheddar over the blueberries.
Drizzle honey and add thyme if using.
Top with remaining bread slices, buttered side out.
Cook over medium-low heat for 3–4 minutes per side until golden brown and cheese is melted.
