12 oz (340 g) spaghetti
3 tablespoons unsalted butter
3 tablespoons olive oil
6 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes (optional)
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup (50 g) grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon lemon zest (optional)
Cook spaghetti in salted boiling water; reserve 1/2 cup pasta water.
Melt butter with olive oil in a skillet; sauté garlic and red pepper flakes until golden.
Add pasta to skillet, tossing to coat.
Add reserved pasta water as needed for a silky sauce.
Stir in Parmesan, salt, pepper, parsley, and lemon zest.
