Marry Me Chicken Pasta Salad combines tender chicken, pasta, sun-dried tomatoes, spinach, and a creamy Parmesan dressing. The salad delivers savory flavor with a smooth texture and refreshing finish.

Ingredients

3 cups cooked rotini pasta
2 cooked chicken breasts, cubed
1/2 cup chopped sun-dried tomatoes
1 cup fresh baby spinach
1/2 cup mayonnaise
1/3 cup sour cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Italian seasoning
2 teaspoons oil from sun-dried tomato jar
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh basil or parsley

Instructions

  • Cook pasta in salted water until just tender. Drain and cool.

  • Season chicken with salt and pepper and cook in a skillet with olive oil until fully cooked.

  • Allow chicken to rest, then cut into small cubes.

  • In a bowl whisk mayonnaise, sour cream, Parmesan, garlic, lemon juice, Italian seasoning, and sun-dried tomato oil.

  • In a large bowl combine pasta, chicken, sun-dried tomatoes, and spinach.

  • Pour dressing over the mixture and gently stir until evenly coated.

  • Refrigerate for 30 minutes.

  • Sprinkle fresh herbs and extra Parmesan before serving.
