2 large chicken breasts (1 lb / 450 g), sliced
1 tablespoon olive oil (15 ml)
1 teaspoon garlic powder (3 g)
1/2 teaspoon paprika (2 g)
1/2 teaspoon salt (2.5 g)
1/4 teaspoon black pepper (1 g)
8 slices sourdough bread
2 ripe avocados (300 g), sliced
1 1/2 cups shredded mozzarella or Monterey Jack (170 g)
1/2 cup sliced tomatoes (100 g)
1/4 cup red onion (40 g), sliced
4 tablespoons mayonnaise (60 ml)
2 tablespoons butter (30 g), softened
Cook seasoned chicken in olive oil until internal temperature reaches 165°F (74°C).
Spread mayonnaise inside bread slices and butter the outsides.
Layer chicken, avocado, tomato, onion, and cheese.
Assemble sandwiches.
Cook in skillet 3–4 minutes per side until golden and cheese melts.
