1 lb (450 g) potatoes, peeled and diced
1 lb (450 g) ground beef
2 tablespoons olive oil
1 small onion (120 g), diced
3 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1/4 cup (60 ml) beef broth or water
1 cup (100 g) shredded cheddar cheese
1 cup (60 g) shredded lettuce
1/2 cup (60 g) diced tomatoes
1/2 cup (75 g) corn kernels
1/4 cup (40 g) sliced black olives (optional)
2 tablespoons chopped fresh cilantro
Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper; roast 20–25 minutes.
Heat remaining olive oil in a skillet, sauté onion 2–3 minutes.
Add garlic and cook until fragrant.
Add ground beef, cook until browned.
Stir in spices and beef broth; simmer 5 minutes.
Add roasted potatoes and combine gently.
Transfer to bowls, top with cheddar cheese, lettuce, tomatoes, corn, olives, and cilantro.
Serve warm.
