A cozy, satisfying bowl of roasted potatoes, seasoned ground beef, melted cheese, and fresh toppings—perfect for weeknight dinners.

  • 1 lb (450 g) potatoes, peeled and diced

  • 1 lb (450 g) ground beef

  • 2 tablespoons olive oil

  • 1 small onion (120 g), diced

  • 3 cloves garlic, minced

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon cayenne pepper (optional)

  • 1/4 cup (60 ml) beef broth or water

  • 1 cup (100 g) shredded cheddar cheese

  • 1 cup (60 g) shredded lettuce

  • 1/2 cup (60 g) diced tomatoes

  • 1/2 cup (75 g) corn kernels

  • 1/4 cup (40 g) sliced black olives (optional)

  • 2 tablespoons chopped fresh cilantro

Instructions

  • Preheat oven to 400°F (200°C). Toss potatoes with olive oil, salt, and pepper; roast 20–25 minutes.

  • Heat remaining olive oil in a skillet, sauté onion 2–3 minutes.

  • Add garlic and cook until fragrant.

  • Add ground beef, cook until browned.

  • Stir in spices and beef broth; simmer 5 minutes.

  • Add roasted potatoes and combine gently.

  • Transfer to bowls, top with cheddar cheese, lettuce, tomatoes, corn, olives, and cilantro.

  • Serve warm.

Notes

Adjust spices to taste. Leftovers reheat well; add fresh toppings before serving.
