Crisp cucumber slices filled with creamy chicken salad for a refreshing, protein-packed snack or light meal.

Ingredients

2 cups cooked chicken breast (280 g), shredded or diced
1/4 cup Greek yogurt (60 g)
2 tablespoons mayonnaise (30 ml)
1 teaspoon Dijon mustard (5 ml)
1/2 teaspoon salt (2.5 g)
1/4 teaspoon black pepper (1 g)
1/2 cup celery (50 g), finely diced
1/4 cup red bell pepper (30 g), finely diced
1/4 cup green onions (25 g), sliced
1 teaspoon fresh lemon juice (5 ml)
1/2 teaspoon garlic powder (1 g)
2 large cucumbers, thinly sliced lengthwise
Optional: fresh parsley or dill for garnish

Instructions

  • Mix chicken, Greek yogurt, mayonnaise, mustard, lemon juice, garlic powder, salt, pepper, celery, bell pepper, and green onions in a bowl.

  • Slice cucumbers lengthwise into thin strips and pat dry.

  • Spoon chicken salad along one edge of each cucumber slice.

  • Roll tightly and secure with a toothpick if needed.

  • Garnish with fresh herbs and serve immediately.
