Tender pasta tossed in a creamy, garlicky sun-dried tomato sauce with Parmesan and fresh basil for a cozy comfort meal.
12 oz (340 g) pasta of choice
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup (80 g) sun-dried tomatoes, chopped
1/2 cup (120 ml) heavy cream
1/4 cup (60 ml) vegetable or chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried Italian herbs or oregano
1/4 cup (25 g) grated Parmesan cheese
2 tablespoons fresh basil, chopped
Cook pasta until al dente; reserve 1/2 cup pasta water, then drain.
Sauté garlic and sun-dried tomatoes in olive oil 2–3 minutes.
Add cream, broth, salt, pepper, and herbs; simmer 3–4 minutes.
Toss pasta in sauce, adding reserved pasta water as needed.
Stir in Parmesan and basil; toss well.
Serve garnished with extra Parmesan and basil.
