3 cups cooked rotini pasta
2 cups cooked chicken breast, diced
1 1/2 cups cherry tomatoes, halved
1 cup fresh mozzarella pearls
1/3 cup fresh basil leaves, sliced
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 clove garlic, finely minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook pasta in salted boiling water until tender yet slightly firm. Drain and cool.
Place cooled pasta in a large mixing bowl.
Add diced chicken, halved tomatoes, mozzarella pearls, and sliced basil.
In a small bowl whisk olive oil, balsamic vinegar, garlic, salt, and pepper.
Pour dressing over the pasta mixture.
